Course II: Bucatini Grenache Charred shishito peppers flirt with silky strands of bucatini, tangled in a reduction of Grenache wine, smoky, fruity, and unapologetically bold. Each bite lingers like a secret told at midnight. Course III: Switchel Punch Sharp, sweet, and just a little wild, this colonial elixir of apple cider vinegar, ginger, and honey is reimagined as a chilled punch. It’s clean, biting, and finishes with a slow, satisfying burn that begs another sip. Course IV: Cold-Smoked Squab Tender squab, kissed by cold smoke and laid gently over a canvas of Annalise purée, earthy, sultry, and rich.
