MENU
Course I: Prawns Two Ways
Succulent prawns, offered in a choice of irresistible finishes:
β€’ Bathed in warm, anise-kissed Sambuca cream, their natural sweetness deepened and coaxed to the surface.
β€’ Or steeped in a silky lemongrass-coconut broth, with a cool red pepper coulis draped like a whisper across the plate, a harmony of heat and hush.
Course II: Bucatini Grenache
Charred shishito peppers flirt with silky strands of bucatini, tangled in a reduction of Grenache wine, smoky, fruity, and unapologetically bold. Each bite lingers like a secret told at midnight.
Course III: Switchel Punch
Sharp, sweet, and just a little wild, this colonial elixir of apple cider vinegar, ginger, and honey is reimagined as a chilled punch. It’s clean, biting, and finishes with a slow, satisfying burn that begs another sip.
Course IV: Cold-Smoked Squab
Tender squab, kissed by cold smoke and laid gently over a canvas of Annalise purΓ©e, earthy, sultry, and rich. Finished with shards of petrified egg yolk that melt into the warmth of the bird, adding complexity and a touch of the forbidden.
Course V: Summer Dreams
Pillowy white sweet cream sandwhiched between two layers of decadently moist pound cake. A tantalizing tart, dark strawberry/black berry couli delicately drapped across your plate, to shock and awe your palate back into submission.
